
Pesto on Fusilli
A kid tested favourite! Princess Rachel from our video "Dining Etiquette Lesson 2: Trying new food" loves this.
There are many versions of pesto. We omitted all nuts commonly used in pesto recipes.
Ingredients:
2-3 cups loosely packed fresh basil leaves
1 cup of grated romano cheese or parmesan cheese
(Kids prefer the lighter tasting romano cheese)
1 cup of pure virgin olive oil
(for a lighter taste you can use half a cup of olive oil and half a cup of canola oil or other vegetable oil)
4 cloves of garlic
Put all ingredients in a blender and puree until it is the consistency of pea soup. If it is too thick add more oil. If it is to runny add more cheese.
Serve over your favourite pasta. Usually 1-2 tablespoon per serving. Mix throughly so that it covers all the pasta.
